Homemade Carrot Cake Recipe | Best Carrot Cake Recipe

Cakes are sweet desserts composed of single or multiple layers. The main layer contains of a mixture of fresh cheese, eggs, and sugar. Here is a carrot cake recipe which contains carrots, walnuts and cream cheese.

Ingredients:

Cake

  • Granulated sugar – 1.5 cups
  • Vegetable oil – 1 cup
  • Eggs – 3
  • All-purpose flour – 2 cups
  • Ground cinnamon – 2 teaspoons
  • Baking soda – 1 teaspoon
  • Vanilla extract – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Shredded carrots (5 medium) – 3 cups
  • Walnuts (chopped) – 1 cup

Cream Cheese Frosting

  • Cream cheese (softened) – 1 package (8 ounce)
  • Butter or margarine (softened) – 1/4 cup
  • Milk – 2 to 3 teaspoons
  • Vanilla extract – 1 teaspoon
  • Powdered sugar – 4 cups
  • Nutmeg (Optional)

Procedure:

  • Preheat oven to 350°F.
  • Grease a 13×9 inch round baking pans with shortening.
  • Add granulated sugar, oil and eggs in a medium large bowl and beat with electric mixer on low speed for about 30 seconds or until well blended. Mix flour, baking soda, cinnamon, salt and 1 teaspoon vanilla extract. Beat the mixture on low speed for 1 minute.
  • Add the mixture in carrots and nuts; mix well. Pour the mixture into baking pan.
  • Place the mixture in the preheated oven and bake for 40 to 45 minutes or until a toothpick poked into the center and comes out clean.
  • Remove from oven and cool for about 1 hour. Remove the cake from pan.
  • Beat butter, cream cheese, milk and vanilla in a medium bowl using an electric mixer on low speed. Gradually add powdered sugar and beat until smooth and spreadable.
  • Frost the cake or fill and frost round layers of cake with frosting. Serve.

You can sprinkle nutmeg over the top of the frosted carrot cake, if you wish. Store in refrigerator.
