Let’s Prepare, The Yummy Greek Lamb Salad With Tzatziki

Lamb salad with tzatziki is a Greek cuisine. The Tzatziki dip pulls this dish together and the salad is refreshing and tasty.
For Lamb –

  1. Deboned Leg of lamb – 1.5 kg
  2. Olive oil
  3. cloves garlic – 3 (Crushed)
  4. Rosemary – 3 Springs
  5. Juice and zest – 1 Lemon
  6. Salt and pepper

For Salad –

  1. Thinly sliced small aubergines – 2
  2. Thinly sliced large courgettes – 6
  3. Olive oil
  4. Salt and pepper

For Tzatziki dressing –

  1. Cloves garlic – 3
  2. 3 Sprigs mint – 3
  3. Cucumber – 1/2
  4. Bulgarian yogurt – 250 ml
  5. Extra virgin olive oil – 45 ml
  6. Juice and zest of 1 small lemon
  7. Salt and pepper – as taste
  8. Baby spinach leaves – 100 g
  9. Marinated sun-dried tomatoes – 1 packet
  10. Good quality feta cheese, cubed – 200 g


  • Pre heat oven to 200°C.
  • Lamb: Mix olive oil, garlic, rosemary, lemon juice and zest, and seasoning together and massage this mixture with the lamb. Place the lamb onto a roasting tray and roast for about 40 minutes. While the lamb is roasting, prepare the salad.
  • Salad: Brush olive oil on the aubergine and courgette slices and season. Grill the veggies on both sides until softened and charred in a hot griddle pan. Then place onto a baking tray and pop under a grill element in the oven for 2 minutes.

·         Tzatziki dressing: Place all the ingredients in a blender and whizz until well combined.

  • Finally, arrange the spinach, marinated sun-dried tomatoes, grilled vegetables, feta cheese and lamb in layers on a large platter. When ready to serve, drizzle generously with olive oil and the tzatziki dressing. Serve at room temperature.
