Healthy Stuffed Tomatoes Recipes | Easy Recipes For Lunch

Stuffed tomatoes are made of tomatoes stuffed with different kinds of filling ingredients like vegetables, meats and rice. Here is a delicious stuffed tomato recipe, which is made of heirloom tomatoes, cheese and spices.


  • Beefsteak or heirloom tomatoes – 4

  • Shredded Pepper Jack cheese – 1.5 cups (4 ounces)
  • Large clove garlic (finely chopped) – 1
  • White onion (grated or finely chopped) – 3 tbsp.
  • Whole wheat panko breadcrumbs – 1 cup
  • Dried oregano – 1 tsp.
  • A handful finely chopped cilantro or parsley
  • Parmesan cheese (grated) – 1/4 cup
  • Salt and pepper – to taste
  • Olive oil spray


  • Preheat the oven to 425° F.
  • Line a baking tray with a baking sheet and spray with cooking spray.
  • Cut off the tops of the tomatoes and lightly squeeze them to remove some seeds or use a teaspoon. Scoop the flesh of the tomatoes into a medium bowl, using a spoon.
  • Season the hulled tomatoes with black pepper and salt. Combine the tomato flesh with shredded Pepper Jack cheese, chopped garlic and onion.
  • Fill each hulled tomatoes with this mixture by using a spoon.
  • Combine bread crumbs, fresh cilantro or parsley, Parmesan cheese and oregano in another mixing bowl. Fill this mixture on the top of the stuffed tomatoes and spray olive oil with cooking spray.
  • Arrange the stuffed tomatoes on the prepared baking sheet and place them in the preheated oven. Roast them for about 8 to 10 minutes or until golden and the cheese has melted.

You can refrigerate this stuffed tomato unbaked and thaw and bake them before serving. You can add some chopped vegetables in the filling.
